78° to 80°

8 oz.  stay soft

stay soft  (product used to extend the shelf life and soft and chewy texture)

6#            bread flour

6#            bakers’ pastry

3/4 oz.     cream of tartar

                lemon

10 oz.      eggs

3#            water

Roll dough and fold top to bottom, roll and make a (?), repeat in 15 minutes, rest 15 minutes.
